The Government is committed to reducing death and ill health caused by diet-related disease. More than ever caterers need to understand the link between diet and health.

The following course is appropriate for all employees in catering environments involved in the selection of menus, recipes and ingredients:

CIEH Level 2 Award in Healthier Foods and Special Diets – 1 day


 Allergy Awareness and Special Diets 

It is reported that around half a million people in the U.K. currently suffer from a severe, life threatening, food allergy. The prevalence of food allergy is at its highest amongst children, around 1 in 17, according to the U.K Charity “The Anaphlaxis Campaign”.

Around 1 in 100 of our population suffers from Coeliac disease and cannot eat foods containing gluten, although it is estimated that this figure may rise to 1 in 10.

So it is vitally important that all those people who provide catering for others, whether in commercial or voluntary catering services, schools and particularly in a care settings are aware of the needs of those customers with special diets.

Basic Nutrition and Catering for Special Diets in Independent Schools – 1 Day suitable for all catering assistants and service staff

Intermediate Nutrition and Catering for Special Diets in Independent Schools – 2 Days suitable for chefs, cooks and catering managers
